Meatless Monday

Wow! This came around fast again.
Why do I think Meatless Monday is important?
Meat production uses a massive amount of water, the Australian Bureau of Statistics claims 60 litres to 320 litres of water is used to produce 1 kilo of meat! This is an estimate and calculation is my no means perfect but I am sure you would agree that even at 60 litres per kilo it is a lot of water, especially in Australia where water can be in very short supply!

The below recipe is one of my own and is a bit vague with amounts, but you'll work it out!

Tonight for dinner we had:

Bean Enchiladas

One packet of store bought tortilla wraps (we use about 12 wraps)
Store bought or home made salsa
Cans of four bean mix (we use two cans of 420grams)
Cheese
Butter
flour
milk

Drain the beans and place in a bowl, stir in the salsa (the amount is up to you). Using one tortilla wrap at a time, place a spoonful or two onto the wrap and roll it up. Place the in an oven proof dish. Continue to have the required number of wraps for your family. Cover in foil and place in a pre hated oven to heat through.
In the mean time melt some butter in a saucepan and then add flour a little at a time time it forms a thick paste, add milk a little at a time stirring nonstop (this is classic white sauce)When you have enough sauce for your family remove from the heat and stir in cheese (I use whatever cheese is in the fridge plus a little Parmesan)
When the wraps are hot through place on plates, pour over cheese sauce and serve!

You could add a salad or steamed veg to the side to fill these out a little if you wish.
